Ganso Stamina Manten Ramen Suzuki
元祖スタミナ満点らーめん すず鬼
Suzuki is a night-only basement shop near Mitaka Station's south exit that created 'Stamina Manten Soba', a dark soy, pork-belly and onion ramen with free garlic, ginger and back fat.
The shop
Owner Shinsuke Suzuki opened Suzuki on November 18, 2019. By day the same basement runs as Torikoku Chuka Suzuki (a chicken-and-seafood ramen shop), and the 'stamina' menu is served at night. The 'Stamina Manten Soba' name was registered as a trademark in 2020. Its frozen version won the overall grand prize in Takumen.com's frozen ramen awards three years running, and the shop was on Tabelog's Ramen Hyakumeiten 2025 list.
The bowl
The broth is a rich chicken- and pork-bone stock under a very dark soy base, topped with pork belly and sweet onion. Time Out likens it to a cross between Takeoka-style ramen and Arirang ramen, a garlic-and-chive style. Noodles for the night menu are made in a noodle room next to the shop.
How to order
The basic bowl is Sta-Man Soba; there is also a spicy version and a dipping-noodle version called Tsuke-Man. Garlic, ginger and back fat can be added for free, and raw egg, quail eggs or chives are paid extras.
