The shop

Kamo Chukasoba Kaede opened on 21 July 2021 as a new brand from Ramen Kaede, a Hachioji shop that marked its 20th anniversary in December 2023. Both are run by soup&smile, which says it uses only selected natural ingredients and no umami seasonings. Tabelog named the shop to its Ramen Hyakumeiten list in 2023.

The bowl

When it opened, the soup was made only from Kishu duck, ma-kombu kelp and Japanese vegetables, using nano-bubble hydrogen water for both soup and noodles. The soy tare blends a tamari soy from Yuasa with Okanaosaburo's 'Nihonichi' soy sauces. The noodles are made in-house from Japanese wheat: thin straight noodles or thicker hand-rubbed ones. Toppings on the special bowl include charcoal-grilled duck thigh, roast and smoked duck loin, duck meatballs and a marinated egg.

How to order

The signature is the Kishu kamo chuka soba. 'Tokusei' adds the full set of duck toppings. A duck paitan tsukemen has also been offered; at launch you could choose 200 g, 300 g or 400 g of noodles for the same price. 'Kamo-negi aedama' is a seasoned extra serving of noodles with duck and leek. Firm ('katame') cooking is not available for the hand-rubbed noodles.
