Menshow Takuma
麺笑 巧真
A 12-seat counter two minutes from Keio-Hachioji that serves a clear soy-sauce ramen built on a double soup of meat and seafood stocks. A salt version is offered too.
The shop
Owner Takuma Ishikawa opened the shop on 7 May 2020. He trained at Chuka Soba Goemon in Nishi-Hachioji, the Hachioji ramen shop run by his father, where he learned how to make the meat-based stock and the tare. He learned seafood stocks at a well-known shop in central Tokyo, and the two together became the base of his double soup. Tabelog named the shop to its Ramen Hyakumeiten list in 2022, 2024 and 2025.
The bowl
The soup blends a meat-based stock with a seafood stock, seasoned with a soy tare you can clearly taste. The thin noodles are laid neatly in the bowl. The large chashu slices are cooked at low temperature and stay pink.
How to order
The standard bowls are Shoyu Ramen and Shio Ramen, ¥850 each on the official menu. 'Tokusei' is the fully loaded version with extra toppings. A smaller half ramen is ¥700.
