Chinchintei
珍々亭
Chinchintei is a 1950s-founded shop in a residential area of Musashi-Sakai, widely cited as one of the originators of aburasoba, soupless noodles tossed in soy sauce and fat.
The shop
Chinchintei has operated in Musashino since the 1950s; its official online shop gives 1954 and Tabelog gives 1957. It is often described as the birthplace of aburasoba, although the dish's origin is disputed. The shop has also started selling limited-quantity aburasoba kits online.
The bowl
Aburasoba comes with no soup: the soy-based sauce and fat sit at the bottom of the bowl under thick noodles, and you mix from the bottom up before eating. Chili oil and vinegar are on the counter to adjust the taste, and the shop's own take-home set includes sauce, noodles, chili oil and vinegar. Wonton-men in a soy broth is also on the menu.
How to order
Almost everyone orders aburasoba; a large size (oomori) is available, and the regular already contains a substantial amount of noodles. Mix thoroughly, then add chili oil and vinegar to taste.
