Tsubame-Sanjo Hojuntei
燕三条 豊潤亭
A nine-seat Tsubame-Sanjo style ramen shop near Musashi-Koganei Station, serving extra-thick noodles in a niboshi soy-sauce soup topped with back fat that you can order from none up to about four times the standard amount.
The shop
Tabelog lists the opening date as November 11, 2016. A 2017 GetNavi article introduced Hojuntei as the newest Tokyo shop of the Jun group, a Tsubame-Sanjo ramen group from Niigata, and noted that it uses a house-made noodle with a high water content of over 50%, unlike typical Tsubame-Sanjo noodles.
The bowl
The shop describes its soup as soy-sauce based, built on five kinds of niboshi and eight kinds of dried ingredients, with a hint of yuzu. Each bowl is topped with back fat (seabura) and chopped raw onion, and served with extra-thick noodles. Standard toppings include tender chashu, iwanori seaweed and menma.
How to order
The standard order is the chuka soba. Choose your back-fat level: none, less, standard, chu-abura (about 1.5x), dai-abura (about 2x) or oni-abura (about 4x). The 'toku' (special) versions add extra chashu, iwanori, menma and onion plus a seasoned egg. Spicy kara soba, tsukemen, mazesoba and kimchi ramen are also offered, and a large noodle portion costs extra.
