The shop

The shop used to be in Shibasaki-cho in central Tachikawa and moved to its current site in Nishisuna-cho. On its tenth anniversary it reviewed its ingredients and added new dishes. Its tsukemen has appeared on TV and in magazines.

The bowl

The shop makes two soups. One is a clear chicken stock it calls 'Qingdao soup', made from Nagoya Cochin and Daisen jidori chicken. The other is a pork-bone (tonkotsu) soup simmered for two days. Noodles come in several types, including whole-wheat. For the signature tsukemen, the dipping soup is sealed under pastry and baked.

How to order

For the pie-crust tsukemen, order the UMA MEGA chashu tsukemen (¥1,750) or the UMA Premium chashu tsukemen (¥1,900).
