The shop

The owner trained at Menya Musashi in Shinjuku and later worked at Onmen Shuka Rakuraku in Kichijoji, where he was also involved in menu development, before opening Chuka Soba Shibata in November 2013. After more than ten years in the Sengawa area, the shop moved to Komae and reopened on September 24, 2024. In May 2026 Toyo Suisan released a Maruchan cup noodle bearing the shop's name.

The bowl

The shop says its soup is built on jidori (heritage-breed) chickens such as Hinai-jidori and Tamba Kurodori, seasoned with a blend of 11 soy sauces. A trade-press report describes the base as chicken and pork with chicken fat (chiyu) on top. Earlier interviews note that the shop switched to house-made noodles in 2020; earlier menus also included niboshi soba and shio soba.

How to order

The standard order is the chuka soba (soy sauce).
