Shibasakitei Tsutsujigaoka Honten
柴崎亭 つつじヶ丘本店
A 10-seat counter shop two minutes from Tsutsujigaoka Station, run by a Japanese-cuisine-trained owner since 2011 and selected for Tabelog's Ramen Tokyo Hyakumeiten (top 100) in multiple years.
The shop
Shibasakitei opened in December 2011 and later moved from Kikunodai to its current site near Tsutsujigaoka Station's north exit. The owner, Saburo Ishigooka, has a background in Japanese cuisine. The owner of the Chofu shop Neko to Tsuki trained here.
The bowl
A 2019 interview described the soup as drawn only from fish flakes, mainly bonito, with no pork, chicken or niboshi, finished with aroma oils such as scallion, niboshi and duck oil. Menu names in that article included chuka soba, niboshi soba, tori shio soba, kamo (duck) chuka soba with very thin noodles, and sansho shio soba. The current lineup may differ, so check the menu at the shop.
How to order
Both soy-sauce and salt bowls are on offer; pick from the menu posted at the shop. Size up carefully: the shop's notice states that leaving an extra-large (tokudai) portion unfinished incurs a 500-yen fine.
