Takechan Niboshi Ramen
たけちゃんにぼしらーめん
A niboshi (dried sardine) ramen shop founded in 1994 and now one minute from Chofu Station's east exit, open every day with an all-day schedule on weekdays and Saturdays.
The shop
The shop was founded in April 1994 in Jindaiji and moved to its current spot in Fuda, Chofu, in November 2006. It is now run by the company Takenibo. Sanyo Foods has sold a Sapporo Ichiban instant noodle supervised by the shop.
The bowl
According to the official site, the broth combines several kinds of niboshi (from Kyushu, Nagasaki, Chiba and Ibuki), wild Rausu kombu, domestic bonito and mackerel flakes, domestic pork knuckle bones and Okayama Kibidori chicken. Seasoning uses Kikkogo soy sauce and Nuchimaasu salt, and the shop says it draws flavor from the dried fish and kombu rather than relying on chemical seasonings.
How to order
Choose the ramen in soy sauce (shoyu) or salt (shio); tsukemen is also served. The Tabelog menu (updated 2024) lists half, regular, large and double sizes, a 'special' with extra chashu and seasoned egg, and a wonton special, plus niboshi rice and kae-dama (extra noodles). Prices on that menu may be out of date.
