Takanochume
たかのちゅめ
A café-like ramen shop near Hana-Koganei Station that builds its chicken soy-sauce and salt ramen on ingredients from the owner's home prefecture of Fukui.
The shop
Takanochume opened on December 6, 2022 (Tabelog). The shop says the owner personally selects ingredients from Fukui Prefecture, his birthplace, including soy sauce, rice, water, pork, chicken, chicken bones, kombu and soda-bushi (dried frigate mackerel).
The bowl
The most popular bowl, the toku shoyu ramen (special chicken soy-sauce ramen), looks dark but is described by the shop as light-tasting. It is topped with pork shoulder and chicken breast chashu, a seasoned egg and wontons. The menu also has chicken salt ramen, chicken tsukemen in soy sauce or salt, tantanmen, a light niboshi ramen and mazesoba.
How to order
First-timers can follow the shop's own recommendation, the special chicken soy-sauce ramen, or choose the plain or seasoned-egg versions of the soy-sauce or salt ramen. Extra noodles, wontons and a special topping set can be added. As of the menu updated in July 2025, bowls start at ¥890 for the light niboshi ramen. A children's ramen is available.
